Delacata Squash a late winter treasure

I love these late winter squash, I found a few beautiful squash at the local Whole Foods supermarket and I got the idea for an early Long Island barbeque.

Delacata Squash
Description:
Very pretty, cream colored with green striped outer skin and a pale orange colored flesh. About 5 – 12 inches long.
How to pick one:
Make sure there are no blemishes and the squash is sturdy not soft.

In season:
Fall to spring (better get them while you can)
How prepared:
- Roasted
- Sauteed
- Barbequed
- Stuffed and more

Storage:
Like potatoes, store them in a cool, dry dark place. Will store at room temperature for 4 weeks. Do not refrigerate.

Taste:
Nice mildly sweet tasting and delicious squash with a lighter texture. Less sugary, less flesh, and less carbs than a butter squash, you can eat the skin or not.

Today I roasted it with large asparagus, yellow and green zucchini, plus onion and garlic grass-fed skirt steak. I encourage you to get out there and try this squash on the grill before it’s too late. I love grilling and with temperatures getting warmer, I know this is going to be a great barbeque summer!
